Just Right Bites

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

I was inspired by the exotic flavors of ginger and horseradish,
I like the spicy tastes combined in the meat.

Ingredients:

6 slices peppered bacon, cooked and diced

1 small red onion, diced

1 red bell pepper, cored and diced

2 garlic cloves, minced

2 eggs, slightly beaten

1 Tbs prepared horseradish

1 tsp sea salt

1 tsp freshly ground black pepper

1 tsp Dijon mustard

1 Tbs minced ginger

2 lbs ground chuck

6 Tbs crumbled blue cheese

1/2 C sour cream

6 Kaiser Rolls

Instructions:

In a large skillet cook bacon on medium heat until crisp.

Remove bacon and reserve 1Tbs drippings. Remove and pat bacon on paper towels then dice bacon. Set aside. In the same large skillet add red onion, bell pepper and diced garlic; sauté until onion and garlic are soft and transparent. Set aside. In a large bowl combine eggs, horseradish, sea salt, black pepper, Dijon mustard and minced ginger. Crumble beef onto mixture and blend well. Shape into 6 patties. Grill patties on medium heat 7 minutes each side or until juice runs clear. While patties are cooking blend together in a bowl the blue cheese, bacon and sour cream. Toast buns lightly over grill then spread blue cheese spread on the top of the bottom half of each roll. When patties are ready place on bottom half of roll then top with the saute onion, bell peppers and garlic. Top burger with top half of roll
