Instructions

First take fresh ground sirloin and place in a mixing bowl. Add a good palmful of the grill seasoning, the worcestershire sauce, dry mustard, ground cumin and bourbon. To this mixture add the brown sugar. Combine this mixtrure well, but do not over mix the mixture as you do not want it to become dry or tough. Score the mixture into four sections by hand and coat the burgers with the extra virgin olive oil. Light your gas grill and place the burgers on medium heat. Leave them alone and let them cook for 4-5 minutes before flipping them. Meanwhile, preheat a pan on the stove on medium heat. Add butter and extra virgin olive oil to pan. When this melts down add the sliced mushrooms and chopped onions. Let these saute together till they are fully cooked approximately 6-7 minutes. Next, use a bowl to mix the mayonaisse and the dijon mustard togethere along with the juice of one lemon. Stir mixture together and set aside. Afterwards, butter the buns and add them to the grill for toasting in the last few minutes of cooking the burgers. Add the smoked gouda to the burgers while still on the grill the last two minutes of cooking. The cheese will melt nicely. Remove the burgers after 4-5 minutes on each side for medium rare. Place burgers on toasted bottom bun, add mushroom/onion mixture, chopped arugula and dress top bun with the dijon mustard/mayo combination. Lastly, add the top bun to the burger and Enjoy!
