Key West Burger

Ingredients

1/2 pound medium shrimp, peeled and deveined
1 tablespoon canola oil
1 1/2 teaspoons Cajun seasoning
Juice from 1/2 medium orange
1 medium avocado, chopped
1 medium mango, chopped
1/4 cup cilantro, finely chopped
1 Habanero chili, minced
1/4 cup tequila
1/4 cup guava nectar
Juice from 1/2 lime
1/4 teaspoon salt
1 1/2 pounds ground chuck
1 1/2 pounds ground sirloin
8 ounce can crushed pineapple, completely drained
1/4 cup Sutter Home Merlot
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
6 tablespoons butter, softened
2 teaspoons Cajun seasoning
6 kaiser rolls, split
1 cup cilantro, loosely packed

 

Instructions

To marinate shrimp: Combine shrimp, canola oil, 1 1/2 tsp. Cajun seasoning and orange juice in a bowl, cover and refrigerate 30 minutes.

Preheat a gas grill to medium-high. Remove shrimp from marinade and thread onto skewers. When grill is ready, brush the grill rack with vegetable oil and place shrimp on rack. Cook shrimp about 1 1/2 to 2 minutes per side until opaque. Remove from grill and cool.

To make the salsa: In a medium bowl, combine the avocado, mango, 1/4 cup cilantro, Habanero chili, tequila, guava nectar, lime juice and salt. Chop the grilled shrimp and add to the bowl. mix well and set aside.

To make the patties: Combine the ground chuck, ground sirloin, pineapple, Merlot, Worcestershire sauce and salt in a bowl. Handling the meat as little as possible, as to avoid compacting it, mix well. Divide in to 6 equal portions and shape into patties to fit the rolls.

Place patties on heated grill rack, cover, and cook, turning once until done to preference, about 5 1/2 minutes on each side for medium.

While the patties are cooking, combine in a small bowl the butter and 2 tsp. Cajun seasoning. When the patties are done cooking, remove from grill and keep warm. Place the rolls cut side down on the outer edge of the grill rack and toast lightly.

To assemble the burgers: Spread 1 tablespoon of the butter mixture over the cut side of the rolls. On each roll bottom, place a small amount of loose cilantro, a patty, and a generous portion of salsa. Add roll tops and serve.
