Kickin’ Goat Cheese Burger

2 pounds sirloin, ground
Kosher Salt
freshly ground pepper
4 hamburger buns
4oz goat cheese
2 tablespoons horseradish
1 cup mayonnaise
3 tablespoons freshly chopped dill
1 onion
2 tablespoons olive oil
1 tomato
8 strips of bacon
2 tablespoons minced fresh thyme
1/2 cup dry white wine(Sauvignon Blanc)
6oz baby spinach



Preheat the cast iron skillet to medium. In a bowl, season the ground sirloin with salt and pepper and form four patties. Place the burgers in the skillet and cook each side until done. Toast the hamburger buns lightly. In a bowl, mix together with a fork, goat cheese, horseradish, mayo, and dill. Cover and set aside. Chop the onion into thick slices. In a separate pan add olive oil and saute the onions at low heat until they are caramelized. Remove the skillet from the heat and deglaze with white wine. Add the spinach and let it almost wilt. Then add 3/4 of the goat cheese mixture and stir it all together. Preheat the oven to 350 degrees. Lay out 8 strips of bacon on a baking sheet. Sprinkle over ground pepper and thyme. Bake the bacon until it is crispy. On another baking sheet lay out 4 thick slices of tomato and garnish with salt and pepper. Bake for 4 minutes, turning once. Spread the goat cheese mixture on the bottom bun. Place the cooked tomato on the bottom bun and lay the burger on top of it. Put two slices of bacon on top of the burger. Add the saute spinach, onion, and goat cheese mixture on top of the bacon. Place the top bun on top and enjoy.
