Kimchee Pan Chan Burger

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

I live in Texas and we love our burgers down here!! My Mom-in-Law is Korean.(Americanized) She has taught me a lot of Korean dishes.( which I adore) so I combined the flavors of the two to make this delicious burger.This is my East “meats” West burger!!

Ingredients:

Ginger Mayonnaise:
2/3 cup. mayonnaise
1 tsp. ground ginger

Spinach Pan Chan:
3 cups baby Spinach leaves,pre washed
2 green onion,chopped
2 tbs. soy sauce
2 tbs. sesame oil
1/4 tsp. ground red pepper
1 clove garlic,minced

Pan Chan pickles:
1 c. cucumbers.sliced thin (1 medium size)
1 tsp. sugar
3 tbs. rice wine vinegar
2 tsp. sesame seeds
1/4 tsp. salt

Patties:
2 pounds ground chuck
2/3 cup kimchee,drained, chopped fine
2 green onion chopped
3 tbs. soy sauce
2 tbs. sesame oil
1 tsp. ground black pepper
1 tsp. ground ginger

6 leafs red tip lettuce
1 cup mung bean sprouts
6 white buns,split

2-3 tbs.vegetable oil for greasing grill

Instructions:

Heat a charcoal grill to medium -hot or an electric grill to medium -hi heat.

In a small bowl mix together the mayo and ground ginger.set aside.

In a large bowl toss together the spinach leaves,chopped green onion,soy sauce,sesame oil,red pepper and minced garlic.Toss well.Set aside.

In another bowl combine sliced cucumbers,sugar,rice wine vinegar,sesame seeds and salt. Toss well, set aside .

Place the ground chuck in a large bowl.Drain and finely chop the Kimchee add to meat along with chopped green onion,soy sauce,sesame oil,black pepper and ginger.Shape into 6 equal sized patties.

Brush grill rack with oil.Place patties on heated grill and cook for 5-7 minutes per side for medium.Place the buns around the outer part of the grill heating the buns the last 2 minutes the burgers cook.

Assembling the burgers,Place bottom buns cut side up and spread with some of the of the ginger mayonnaise.Distribute the spinach and cucumbers equally amoung the buns.Add the patties .Top with sprouts and lettuce leaves. Spread cut side of top buns with more ginger mayo and place on top of patties.
