2 lb ground chuck
½ cup cold mashed potatoes
2 Tb Sutter Home Chardonnay
1 shallot, finely minced
½ cup pickled red cabbage, drained
1 Tb capers, drained and rinsed
salt and fresh ground black pepper to taste
6 slices Havarti cheese (about 6 oz)
6 Kaiser rolls, sliced
Preheat gas grill to medium-high. In a bowl, combine the ground chuck, potatoes, wine, shallots, cabbage, and capers. Handling the meat as little as possible to avoid compacting it, mix well. Divide the meat mixture into six equal portions, and form the portions into patties to fit the rolls. Add salt and pepper to taste.
When the grill is ready, brush the rack with vegetable oil. Place the patties on the grill and cook until done to preference, turning once, 6-8 minutes. During the last few minutes of cooking, place the rolls, cut side down, on the outer edges of the grill to toast lightly. When the patties are almost done, top each with a slice of Havarti.
Place burgers on toasted buns and cover with roll tops. Serves 6.
