lakeside brisket burger
3lbs of freshly "TWICED" ground beef brisket
3/4 cup sour cream
1/4 cup freshly chopped chives
Have butcher ground brisket twice. Make a 4oz ball and wrap in suran wrap; press down firmly to make rounded patty. Repeat. Place 2tbs sourcream in center and cover with 2tsp chopped chives. Place second patty on top and gently crimp edges making one 8oz patty. repeat. Salt and pepper to taste and chill until cooking. grill over hot grill, HINT. Do not flip burger too soon;only flip once.
