Lamb Burger With Cherry Red Onion Bacon Jam, Fried Goat Cheese, And Grilled Lemon Aoli

Ingredients

  • cherry red onion bacon jam
  • 4 slices bacon, chopped into small pieces
  • 1 large red onion sliced
  • 4 ounces Sutter Home Cabernet Sauvignon
  • 12 ounces frozen pitted cherries, thawed
  • 4 ounces cranberry juice
  • 1 tablespoon sugar
  • 1 tablespoon dijon mustard
  • 3 ounces pomegranate vinegar
  • salt and pepper
  • fried goat cheese
  • 2 packages 11 ounces each of chevre goat cheese
  • 1 Cup all purpose flour
  • 2 eggs beaten with 2 tablespoons water
  • 2 Cups panko bread crumbs
  • salt
  • vegetable or canola oil for frying
  • patties
  • 2 Pounds ground lamb
  • 2 Teaspoons salt
  • 1 teaspoon pepper
  • 4 teaspoon worchestire sauce
  • oil to coat the grill
  • grilled lemon aoli
  • 1 Cup good quality mayonnaise
  • 1 lemon
  • 1 garlic clove minced
  • 1 teaspoon course ground pepper
  • other ingredients
  • 6 brioche buns
  • 6 tablespoons softened butter
  • 1 Cup baby spinach

Instructions

  • 1. Preheat gas grill to medium high heat
  • 2. Combine all ingredients for the patties and divide into six portions and form patties.
  • Cherry red onion bacon jam
  • 1. In a medium saucepan cook bacon over medium heat until done but not quite crisp.
  • 2. Discard excess bacon drippings, leave about a tablespoon. Add red onions season with salt and pepper and cook until softened, about 5 minutes.
  • 3. Add wine and reduce until most of the wine has evaporated.
  • 4. Add cherries, cranberry juice, sugar, vinegar and cook over high heat until most of the liquid has evaporated, should take about 15 minutes. smash mixture with a potato masher, taste and season with salt and pepper. Remove from heat and allow to cool in a bowl.
  • Grilled Lemon aoli
  • 1. Cut Lemon in half and grill over high heat for about 5 minute.
  • 2. Juice lemon over a fine sieve and add remaining ingredients to a bowl and reserve.
  • Fried Goat cheese
  • 1. place cheese in the freezer for ten minutes, remove and slice each log into 1/2 inch thich slices.
  • 2. Setup a breading station. 1 bowl each of flour, egg wash, and panko bread crumbs.
  • 3. Coat a piece of the cheese in flour, remove and shake off the excess flour then place in the egg mixture and coat the cheese with the mixture evenly. Remove the cheese from the egg mixture and place in the bread crumbs and coat the bread crumbs, remove and shake off the excess bread crumbs and place on a plate. Repeat process until all the cheese is breaded.
  • 4. Heat oil in a skillet over medium high heat, when oil reaches about 350 degrees add the cheese in batches and fry until golden brown.
  • To assemble burgers
  • 1. Butter the cut side of each bun and place on grill cut side down for about 30 seconds to a minute.
  • 2. Grill patties for about 4 minutes a side for medium.
  • 3. Cover the cut side of each bun with the aoli.
  • 4. Place the patty on the bottom bun.
  • 5. Put the cherry red onion bacon jam on top of the patty.
  • 6. Place the fried goat cheese on top of the bacon jam.
  • 7. Put the spinach on the cut side of the top bun and place the bun on top.
  • Serve with a glass of Sutter Home Cabernet Sauvignon and enjoy.
