Lamb Burger With Piquillo Pepper Jam And Brie


  • Burger:
  • 2PoundGround lamb
  • 1 egg to bind
  • Salt and pepper to taste
  • Piquillo jam:
  • 8oz piquillo peppers diced
  • 1oz white sugar
  • 1oz champange vinegar
  • 1Teaspoon paprika
  • 1Teaspoon fresh thyme chopped
  • Salt and pepper to taste


  • Mix ground lamb, egg, salt and pepper together. Form into 4oz patties
  • Reserve in fridge until ready to cook
  • Open can of diced piquillo peppers or any canned roasted pepper works fine, drain well
  • Combine all ingredients in a small sauce pan and season to taste salt and pepper.
  • Let simmer 5-10minutes until jammy. Add a few Tablespoon water or wine to make sure it doesnt dry out as it simmers
  • Remove burgers from fridge and in a medium hot pan sear burgers 3 minutes each side
  • Top each burger with 2 slices of brie cheese
  • As burgers cook, toast buns on both sides
  • Smear bottom bun with lemon aioli, or any store bought mayonnaise is fine.
  • Place spinach and arugula mix on bottom bun
  • Top with burger
  • Smear piquillo pepper jam on top bun and ENJOY!
