Lamb Burgers Roghan Gosht Style

2 Tbs olive oil
1 medium sized yellow onion, finely diced
1 ½ lb ground lamb
1 ½ tsp salt
½ tsp ground ginger
1 tsp freshly ground black pepper
1 tsp paprika
1 tsp cumin seed powder
2 Tbs plain yogurt
6 large spinach leaves, washed
6 Tbs diced tomatoes with chiles
6 6â€Â Italian style hard rolls, split



Preheat grill to medium heat. In a skillet with oil sauté onions until lightly browned. Drain and let cool. In a large bowl mix lamb, salt, ginger, black pepper, paprika, cumin powder and yogurt. Blend in onion. Shape lamb mixture into 6 patties. Grill patties 8 minutes on each side until 160 degrees. Heat rolls on grill until lightly browned. Cover the bottom of the rolls with spinach. Place burgers on top of spinach and top with diced tomatoes.
