Lavender Blue Cheese Burger with Mixed Greens Tossed with a Champagne Vinaigrette

Ingredients

For patties
2 lbs of ground brisket, or mix of 1 lb sirloin/1 lb chuck
salt and pepper to taste
1/4 cup pistachios crushed
1 garlic clove minced
1 Tbsp honey
2 Tbsp white tea or jasmine tea powder
1/2 cup blue cheese crumbles
1/2 cup lavender flowers
1/4 cup panko bread crumbs
1/3 cup dry white wine

For vinaigrette:
1 Tbsp pear juice
2 tsp lemon juice
2 tsp lavender
2 Tbsp champagne vinegar
salt and pepper to taste
2 Tbsp olive oil
2 Tbsp grape seed oil

For assembly:
12 crispy garlic bread or brioche bread
Fresh mix greens
Julienned pear
Blue cheese crumbles

 

Instructions

Fold in all patty ingredients, except the pistachios, into the ground brisket form into 6 patties. Press crushed pistachios onto the burger to coat. Place in the refrigerator, until ready for grilling.

Mix the vinaigrette ingredients together, and set aside.

Prep the grill: set heat to low-med, brush the grill racks with oil.

Spray the burgers before grilling with the a mist of oil. Grill the burgers to your temperature liking. Assemble: Toast bread, Line the burger on the bun. Place fresh mix greens on burger, then drizzle with vinaigrette and the additional blue cheese crumbles, finish with bun top. Enjoy!
