Light My Fire Burger

Ingredients

Meat Mixture:
1.5 lb of fresh ground chuck beef
1 tbs olive oil
1 whole egg
1 tsp chipolte chilli pepper
1 tsp ground red pepper
1.5 tsp sea salt
1 tsp paparika
2 cloves pressed/finely chopped garlic
2 fresh finely chopped jalepeno peppers
1/2 cup finely chopped cilantro
Condiments/toppings
well drained can green chillis( 2 4 oz cans)
sliced pepperjack cheese ( 1 6 to 8 oz pkg)
iceberg lettuce ( 1 head)
sliced ripe red tomatoes ( 2 large)
sliced haas avocados ( 2 ripe)
Bun: Cracked wheat bun ( 1 pkg 8 buns)
Grill: Olive oil spray

 

Instructions

Place fresh ground meat in bowl. Add 1 whole egg and 1 tbs olive oil. Mix well. Finely chop or press to garlic cloves. Set to side. Add 1 tsp ground red pepper, 1 tsp ground chipolte pepper, 1.5 tsp sea salt and 1 tsp ground paparika. Mix very well. Take two fresh jalepeno peppers and cut ends off. Throw away ends. Finely chop the peppers. Be sure to keep your hands away from your eyes and face as oils from pepper will be on the skin of your hands. Add chopped jalapeno peppers.Now wash your hands well before proceeding. You can squeeze fresh lemon juice on your hands before washing to cut the oils from the jalapenos. Add finely chopped cilantro and prepared fresh garlic and mix well. Form into six appx. equal size patties and place back in the refrigerator until ready to cook. Wash and prepare lettuce , tomatoes and avocados. Cover and place in refrigerator. Drain two 4 oz cans of green chillis. Drain well. Place in aluminum foil and wrap up as you will warm them on the grill. Clean grill and remove rack. Spray rack well with olive oil spray and set to side. Light gas grill and heat at high temp for three minutes with lid down.Place rack on grill and burgers and seer for 2 minutes at high temp. Cut temp down to medium to low medium temp. Place packet of green chillis on grill to side. Cover lid. Cook for 2 to 3 minutes. Flip burgers, Cook another 2 to 3 minutes with lid down. Open lid , remove foil packet of green chillis, and add slice of pepper jack cheese to each burger , allow to melt. Should be about a minute or less.Place burger on room temp. fresh cracked wheat bun. Top with 1 to 2 tbs of warmed green chillis Add sliced tomato, lettuce, haas avocado.
