Linda Lee’s Shroomburger

Ingredients

1/2 stick of butter
3 shallots or onions sliced and diced very tiny
1 pound of mushrooms thinly sliced
1/2 cup of white wine preferably Sauvignon Blanc
wine Marinade for beef:
2 tablespoons soy sauce
1-tablespoon olive oil
1-tablespoon balsamic vinegar
1/2 teaspoon of freshly grated ginger
1tablespoon of Worcestershire sauce
2 tablespoon chopped basil
1 1/2 lbs of freshly ground beef
2 white or yellow onions sliced into narrow julienne strips
2 tablespoons of olive oil
1 tomato sliced thinly
4 Kaiser or egg rolls

 

Instructions

Place 1/2 stick of butter in large frying pan Add shallots Add mushrooms sliced Do not turn mushrooms until they are golden and are caramelizing the pan If they are dry, add more butter. When pan is caramelized all around and mushrooms are golden all over Add, ½ cup of wine and let cook for 7 minutes, until wine has soak into mushrooms. Then take mushrooms out and put into a bowl, set aside. Make marinade and set aside. Mix grated ginger, Worchester sauce and basil into the ground beef. Take enough beef in hand (depending upon how large or small you prefer) and mold around 2 spoonfuls of mushrooms and mold ground beef around them. IMP- do not pack Pattie to tightly, keep meat in Pattie loose as it will taste better and cook crisper and juicier. Placing patties in a rectangle glass dish. Take marinade and drop 2 teaspoons of marinade on top of beef Pattie along with slat and pepper Turn over and do the other side Let set in fridge for 1 hour. Take narrowed julienne sliced onions and put into the same frying pan as mushrooms were cooked in, Take 1 tablespoon of olive oil, and fry onions until golden brown and caramelized. If a trace of oil is still left keep that for burgers, use same pan as with out washing it to get flavor from the carmelization. Set aside Can either sauté in it pan or grill but if sautéing must get pan very hot. AND ONLY TURN ONCE. and do not smash patties with a spatula. This will cause them to dry out. Sautéing: You may need another tablespoon of olive oil and if so coat pan in olive oil and make sure you get it up to the sides and wipe away access with paper towel. Place ground beef patties in very hot pan, and cook for 6 minutes on each side. If using grill, grill 4-5 minutes on each side to 160 degrees. Put your burger on a delicious round freshly baked roll, either Kaiser or Egg. Cut roll Add the shroomburger Add a slice of tomato Add sautéed onions on top. Cut in half. Bite in…….. DELICIOUS
