Louisiana BBQ Bacon Cheeseburger

Pairs well with:

White Zinfandel

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.


1.5 pounds fresh ground chuck (80% or leaner ground beef)
7/8's cup tomato ketchup
2 ounces soy sauce
2 ounces hot sauce
4 heaping tablespoons dark brown sugar
2 tablespoons apple cider vinegar
2 tablespoons hot sauce
2 medium – large garlic cloves (finely pressed) -makes about two cups of sauce
1 pound hickory smoked bacon (any brand hickory smoked bacon) 1 package sharp cheddar cheese
1 package soft kaiser hamburger rolls (or regular white hamburger rolls)
1 jar mayo
1 head Romaine or Iceberg lettuce
1 red onion
1 beefsteak or large tomato
Makes about 2 cups of sauce



-Put be-Put beef in a large bowl -In a separate container, mix: 7/8's cup Heinz tomato ketchup 2 ounces Kikkoman soy sauce 2 ounces Crystal hot sauce 4 heaping tablespoons dark brown sugar 2 tablespoons apple cider vinegar 2 tablespoons Tabasco sauce -and lastly, finely press 2 medium – large garlic cloves in the sauce and mix well with fork. -Add 3/4's cup of the sauce you just made to beef and combine until the sauce is completely mixed in with the beef -Make six 1/4 pound patties and refrigerate. -In a large to medium frying pan place the full pack of bacon -turn the grill to high (about 450 degrees F) -place pan with bacon on grill and close the lid leaving the handle outside. -check and turn bacon every five minutes until just crispy. cooks in about 10- 15 minutes -drain bacon grease when done, cover pan and put to the side. Be sure to use an oven mitt when doing the bacon, as the pan gets very hot. -Cut 12 good size slices of extra sharp cheddar cheese, 6 slices of medium thick red onion and beefsteak tomato. Detach 6 pieces of lettuce, put ingredients on a plate and place in the fridge. -Grill beef patties mixed with the sauce at the same grill settings -Cover lid and grill patties for 5 minutes on one side, flip them and do 3 minutes on the other side or to taste. -turn off the grill and add two pieces of cheese to each patty and cover grill for three minutes. – while cheese is melting spread a thin layer of mayo on the top and bottom of each hamburger roll -put each patty on roll and add 3-4 pieces of bacon on each. -generously apply some of the left over BBQ sauce atop the bacon -Add onion, tomato and lettuce -serve and enjoy. There will be left over sauce.
