Luau Pork Burgers with Hawiian Slaw

Ingredients

Cole Slaw:
2 cups shredded cabbage
1/3 cup minced red onions
1 tablespoon minced parsley
1/4 teaspoon kosher salt
1/4 teaspoon paprika
1/4 cup mayonnaise
1/4 cup sour cream
1/2 tablespoon apple cider vinegar
1 teaspoon brown sugar
1/2 cup crushed pineapple,drained
vegetable oil to brush grill rack
Patties:
1 pound ground ham
1 pound ground pork
1 teaspoon kosher salt
1/2 cup diced red onions
1 tablespoon chopped parsley leaves
1 tablespoon paprika
1/2 cup finely dried bread crumbs
1/4 cup pineapple juice
6 slices fresh pineapple
6 slices canadian bacon
6 slices swiss cheese
6 sesame seed buns,split

 

Instructions

Prepare the cole slaw first. In a medium bowl combine the cabbage,onions, parsley,salt,and paprika. In a small bowl,whisk the mayonnaise,sour cream, vinegar,and brown sugar. Add this to the cabbage bowl. Toss gently and then stir in the crushed pineapple. Refrigerate until later use to top the burgers. Preheat grill to a medium-high heat. Prepare the patties by crumbling the ground ham and pork in a large bowl. Add salt,onions,parsley,paprika, and bread crumbs. Add pineapple juice slowly to mixture. Combine well,handling the meat as little as possible. Divide into 6 equal portions. Form patties to fit the buns. When grill is ready,brush grill rack with oil. Place patties on grill rack, cover and cook. Turn once,cooking total of 7-9 minutes on each side. Internal temperature needs to reach 165 degrees. The last few minutes of cooking,place the pineapple slices on the grill for about 1 1/2 minutes on each side. Remove and set aside. The last minute of cooking,place a slice of canadian bacon and a slice of cheese on patties. Cover to melt the cheese. Toast buns on grill for 30 seconds with open sides down,on outside of grill rack. Remove patties to a platter when cheese is melted. To assemble the burger,place bottom of bun on serving plate,add patty,pineapple slice, and top with 1-2 tablespoons cole slaw. Add the bun top and serve the burger. Makes 6
