Luscious Lamb Burger With Tzatziki Sauce
Ingredients
- One half of a large cucumber, peeled, seeded and minced
- Sea salt
- 1 Cup plain Greek yogurt
- Juice of 1/2 lemon
- 1 clove garlic, minced
- 1 tablespoon fresh dill weed
- 1 tablespoon extra virgin olive oil
- Salt and pepper, to taste
- 1 pound ground lamb
- 1 pound ground beef
- 1/4 Cup crumbled feta cheese
- 2 tablespoons minced fresh parsley
- 1 scallion, finely chopped
- 1 tablespoon dried oregano
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 6 Brioche buns, toasted
- 1 red onion, sliced
- 6 thick slices of ripe tomato
Instructions
- Sprinkle salt over the cucumber and leave it to drain on paper towels for at least 20 minutes.
- Squeeze the excess moisture out and place the cucumber in a medium bowl.
- Mix in the yogurt, lemon juice, garlic, dill, olive oil, and additional salt and pepper to taste.
- Set aside.
- In a large bowl, combine the ground meat, feta cheese, parsley, onion, and spices and mix well.
- Form six large patties, approximately 5 inches wide.
- Preheat barbecue grill or grill pan until hot.
- Spray with non-stick cooking spray and grill burgers over medium heat, approximately 6 minutes per side.
- Place burger on toasted bun, topped with a generous dollop of tzatziki, red onion and a slice of tomato.
- Serve with Sutter Home Merlot.
