Luscious Lamb Burger With Tzatziki Sauce

Ingredients

  • One half of a large cucumber, peeled, seeded and minced
  • Sea salt
  • 1 Cup plain Greek yogurt
  • Juice of 1/2 lemon
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill weed
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper, to taste
  • 1 pound ground lamb
  • 1 pound ground beef
  • 1/4 Cup crumbled feta cheese
  • 2 tablespoons minced fresh parsley
  • 1 scallion, finely chopped
  • 1 tablespoon dried oregano
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 6 Brioche buns, toasted
  • 1 red onion, sliced
  • 6 thick slices of ripe tomato

Instructions

  • Sprinkle salt over the cucumber and leave it to drain on paper towels for at least 20 minutes.
  • Squeeze the excess moisture out and place the cucumber in a medium bowl.
  • Mix in the yogurt, lemon juice, garlic, dill, olive oil, and additional salt and pepper to taste.
  • Set aside.
  • In a large bowl, combine the ground meat, feta cheese, parsley, onion, and spices and mix well.
  • Form six large patties, approximately 5 inches wide.
  • Preheat barbecue grill or grill pan until hot.
  • Spray with non-stick cooking spray and grill burgers over medium heat, approximately 6 minutes per side.
  • Place burger on toasted bun, topped with a generous dollop of tzatziki, red onion and a slice of tomato.
  • Serve with Sutter Home Merlot.
