Mama T’s Double Stuffed Burger
Ingredients
3.5 lbs. ground chuck
4 oz. feta cheese with sun-dried tomato and basil
2 tsp. minced garlic
6 slices smoked cheddar/swiss cheese
6 slices hickory smoked bacon (pre-cooked)
6 slices red bell pepper
6 slices red onion
extra virgin olive oil spray
kosher salt (season to taste)
coarse grind black pepper (season to taste)
6 Kaiser Buns
2 Tbsp. softened butter
2 tsp. minced garlic
mayonnaise (to taste)
living butter lettuce
6 slices beefsteak tomatoes
Instructions
Wash and pat dry red bell pepper and cut 6 whole slices.
Peel and cut top of onion off (leave root stem intact); cut 6 whole slices.
Break apart ground chuck into medium mixing bowl. Sprinkle crumbled feta cheese with sun-dried tomato and basil into the ground chuck. Add 2 tsp. of the minced garlic into the ground chuck mixture.
Gently work ground beef mixture together, being careful not to overwork the mixture. Shape 12 – 8 oz. patties. Place patties on cookie sheet. Spray each patty with extra virgin olive oil (first side).
Sprinkle salt and pepper over each patty. Layer 6 of the seasoned patties with 1 slice of the smoked cheddar/swiss cheese; 1 piece of bacon strip (cut in half); 1 slice of red bell pepper and 1 slice of onion.
*Make sure to season both sides of each beef patty.
Take other seasoned patty and place over layered patty and shape into one complete patty; making sure all ingredients remain inside of each patty. Once all patties are shaped and ready; place each patty on the fire ready grill (temperature approximately 475 degrees). Once the patty has released from the grill (no longer sticking to grill plates), turn patty and grill approximately 15 minutes. Flip/turn burger to the other side. Once the burger has released from the grill, turn patty to a 90 degree angle and grill for 15 minutes; turn burger at 90 degree angle and cook for an additional 15 minutes.
Remove from grill, set aside.
Take softened butter and mix the remaining 2 tsp. of minced garlic and spread over each bun. Please on the grill for approximately 1 minute.
Take bun and dress with mayonnaise. Place lettuce and 1 slice of beefsteak tomato on the end piece of the bun. Place burger over the tomato and lettuce and top with the top end of the bun.
Burger is ready to be savored and devoured.
