Mama V’s Tango
1-garlic clove (minced)
2-pounds ground sirloin tip (preferably angus beef)
3 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Sugar
1-Tablespoon Sea Salt
8 ounces Blue Cheese
3 large avocados
1 small yellow onion (minced)
2 Ripe Peaches (peeled, pitted, and finely diced)
1/3-cup real mayo
6-8 Red Leaf lettuce leaves
6-8 Kaiser Hamburger Buns
Peel garlic and mince in small appliance or use garlic press, then pour into large mixing bowl and combine well with ground sirloin tip. Add the Extra Virgin Olive Oil, sugar, and sea salt mix well.
Make into 6 to 8 hamburger 1&1/2-inch patties and place on medium heated grill for 12-20 minutes flipping every 5 minutes. While burgers are cooking to desired wellness, prepare blue cheese spread and guacamole.
Blue Cheese Spread:
In small cast iron skillet on grill, melt butter add blue cheese constantly stirring until it is a smooth consistency. With a heavy duty oven mitt remove from heat and pour into bowl.
In medium mixing bowl place the inside of avocados minus the pit. Smash well with fork. Peel onion and mince in small appliance. Add to avocado. Peel, pit, and finely dice peaches. Add peaches and mayo to avocado and onion and mix well.
Serving on Kaiser bun, brush on layer of blue cheese on top bun then add lettuce leaf. Spread guacamole on bottom bun and add hamburger. Combine top and bottom to complete mouth-watering tango burger.
