Mama’s Red Hot Buffalo Burger

Ingredients

The Patties:
3 lbs ground buffalo
7.5 oz Red Hot Sauce
3.5 oz Chili Hot Sauce Salsa Picante de chili Habanero (Green Hot Sauce)
3 cloves of Garlic minced
3/4 medium red onion minced
1 & 1/2 tsp salt
3 tsp black pepper
1/4 canned green chiles
Topping:
6 oz Blue Cheese
1 medium red onion sliced/rings
3 cups shredded Romaine Lettuce
1 large tomato sliced
6 Onion rolls split
vegetable oil for grill

 

Instructions

Preheat gas grill to medium-high. To make patties, combine ground buffalo, franks red hot sauce, el yucateco chili hot sauce, garlic, red onion, salt, pepper, and green chiles. Mix Ingredients, cover and set aside for aleast 30 mins. While meat mixture is resting. Slice tomatoes, red onions, romaine lettuce and blue cheese. Set aside. Divide the mixture into 6 equal portions and form the portions into patties to fit the onion rolls. Brush the grill rack wil oil. Place the patties on the rack, cover and grill until browned on the bottoms, about 6-8 mins. Turn the patties and continue grilling until the patties reach 160 degrees, about 8-10 mins. During the last few mins of grilling, top the patties with 1 oz of the maytag blue cheese, Split the onion rolls in half, brush the tops and the bottoms of the rolls with oil and grill til lightly toasted. To assemble the burgers, place the blue cheese side of the pattie down on the bottom of the bun, top with 1/2 of romaine lettuce, 3 rings of red onion, and 2 slices of tomato. Add the roll tops and serve. Makes 6 burgers.
