Mango Tango Bruschetta Burgers with Portabella Sauce

I absolutely love mangoes and bruschetta and think the two combined makes a wonderful unique flavorful burger.The mushrooms make the sauce! I love to add something like mangoes to a dish and have my guests drooling over what the secret ingredient might be!

Ingredients:

Burgers:
1 tablespoon Sutter Home Merlot Wine
1 egg
1/2 can (1/2 of 14.5 ounce) Italian tomoatoes diced and drained
1/2 cup mangoes chopped (fresh or jarred)
2 pounds ground chuck
4 ounces Ricotta cheese
1/4 cup Parmesan Reggiano Cheese shredded
1/4 cup finely chopped onion
1 teaspoon garlic salt
1 teaspoon basil
1 teaspoon oregano
3 tablespoons extra virgin olive oil for brushing grilll
6 slices Mozzarella Cheese
6 sesame seed hamburger buns
Sauce:
1/4 cup Sutter Home Merlot Wine
1/4 cup tomato paste
8 ounces Portabello Mushrooms finely chopped
1 teaspoon onion salt
1/2 can (1/2 of 14.5 ounce) Italian tomatoes diced and drained
1/2 cup mangoes chopped (fresh or jarred)
1 teaspoon oregano
1 teaspoon basil

Instructions:

Preheat a gas grill to medium high heat. To make the patties combine in a large bowl wine and egg with a fork and mix well. Add tomaotes, mangoes, hamburger, Ricotta Cheese, Parmesan Reggiano Cheese, onion, garlic salt, basil, and oregano, and mix well with a fork or your hands, handling the meat as little as possible. Form into 6 equal patties and set aside. To make the sauce combine wine, tomatoe paste in a grill-safe pan and mix well with a fork. Add mushrooms, onion salt, tomatoes, mangoes, oregano, and basil, and mix well. Set aside. Brush the grill with olive oil and place the patties on the grill rack after 5 minutes. Place the sauce on the grill as well. Cook patties 7 minutes on each side, turning only once if possible. Cook sauce 5 minutes, stirring occasionally and then place foil or lid on top of pan to keep warm and place on upper grill rack or another burner to keep warm. When burgers are almost done place Mozzarella cheese on burgers and cook an additional 1 1/2 minutes until cheese melted. Place buns open-faced on platter. To assemble the burgers place burger on bottom bun and spoon 1/4 cup Portabella sauce over burgers and place top bun over sauce. Serve immediately. Yields 6 burgers.
