MARCO POLO GOES BURGERS WITH MINT AND MANGO

Pairs well with:

Gewurztraminer

Hard to pronounce yet easy to drink, this wine combines lychee fruit and white peach flavors with a hint of spice.

Ingredients

4 teaspoons soy sauce
2 teaspoons toasted sesame oil
1 tablespoon balsamic vinegar
1 tablespoon Asian fish sauce
1 teaspoon sriracha sauce
1 teaspoon 5-spice powder
2 cloves of garlic, minced or forced through a press
1 tablespoon sugar
30 ounces 20% fat ground chuck

1/2 cup mayonnaise
1/4 cup coarsely chopped cilantro leaves
1/4 cup coarsely chopped mint leaves

1 Walla Walla (or other sweet) onion cut into rings
2 mangoes peeled and sliced
6 multi grain hamburger buns

Instructions

Combine soy sauce, sesame oil, vinegar, fish sauce, sriracha, 5-spice, garlic, and sugar in a large bowl. Add ground chuck and mix lightly. Form into 6 patties with a slight depression in the middle of each.

Combine mayonnaise, cilantro and mint in a small bowl and set aside.

Heat a gas grill to medium high. Cook burgers 3-4 minutes per side with grill cover down, adding buns to toast after patties have been turned. Assemble burgers with dressing, topped with onion rings, patties and mango slices.
