Marinated Catfish Burger

Ingredients

1 cup canola oil
1/3 cup freshly squeezed lemon juice
3 tablespoons soy sauce
1 clove garlic, crushed
1 teaspoon dried oregano leaves
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 pounds farmed catfish fillets
8 oz. plain yogurt
2 tablespoons mayonnaise
2 tablespoons dill pickle relish
1/2 teaspoon worcestershire sauce
1/2 cup dried plain bread crumbs
1 large egg
canola oil for greasing
aluminum foil used for grilling catfish patties
6 whole-grain hamburger buns, split
6 large leaves of butter lettuce

 

Instructions

Mix marinade by combining canola oil, freshly squeezed lemon juice, soy sauce, crushed garlic, dried oregano leaves, salt and freshly ground black pepper in blender and mix on high for 1 minute. Pour marinade over catfish fillets in resealable plastic bag and seal tightly. Make sure marinade completely covers catfish fillets. Place in refrigerator for 2 hours. In small mixing bowl, combine plain yogurt, mayonnaise, dill pickle relish and worcestershire sauce. Mix well and refrigerate until serving. Preheat gas grill with cover to medium. Remove catfish fillets from refrigerator, take out of bag and drain excess marinade. Place fillets in food processor fitted with blade and chop lightly, approximately 10 seconds. Do not over-process. Place chopped catfish in mixing bowl. Add dried plain bread crumbs and large egg and mix well. Divide mixture into 6 equal portions and form into patties to fit hamburger buns. Brush canola oil on aluminum foil that has been placed on heated grill rack. Place catfish patties on greased aluminum foil. Cover and grill 5 minutes on each side. Place buns, cut side down, on edges of foil to warm during last few minutes of cooking. To assemble the burgers, spread tarter sauce on cut sides of buns. On each bun bottom place one catfish patty, top with one butter lettuce leaf. Add bun top and serve immediately.
