Mayan Burger with Mango & Avocado Salsa

Pairs well with:

White Zinfandel

Ingredients

Mango & Avocado Salsa
1 ripe mango, diced
2 medium tomatoes, diced
½ cup red onion, chopped finely
1 avocado diced
4 tablespoons pickled jalapeno peppers, chopped
½ cup chopped fresh cilantro
2 green onions, sliced
1 ½ teaspoons sea salt
½ teaspoon fresh ground black pepper
Freshly squeezed juice of 1 lime
Patties
1 ½ pounds ground chuck or ground beef (with 20% Fat)
1 ½ teaspoons sea salt
½ teaspoon freshly ground black pepper
2 tablespoons Sutter Home White Zinfandel
4 tablespoons jalapeno pepper, chopped
3 green onions, chopped
3 tablespoons taco seasoning
2 tablespoons cilantro, finely chopped
6 tomatoes sliced
6 red onion slices
6 slices hot pepper cheese
vegetable oil for brushing the grill rack
6 kaiser rolls split horizontally

 

Instructions

Prepare a medium hot fire on a charcoal grill with a cover or preheat a gas grill to medium high. To make the salsa combine mango, tomatoes, red onions, avocado and jalapeno peppers and put it in a large bowl. Add cilantro, green onions, salt, black pepper and lime juice. Mix well. Cover and refrigerate until needed. To make the patties, combine ground chuck, salt, pepper, wine, jalapeno peppers, green onions, taco seasoning and cilantro in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions. Make 2 patties out of each part, making 12 patties. Flatten each patty and put 1 slice of tomato, 1 slice of onion and 1 slice of cheese and top with second patty. Pinch edges of patties to seal. Make all the patties like this to fit the rolls. When the grill is ready, brush the grill rack with vegetable oil. Place patties on the rack, cover and cook, turning once until done to preference, 5-6 minutes on each side for medium. During the last few minutes of cooking, place rolls, cut side down, on the outer edges of the rack to toast lightly. To assemble the burgers, place the patty on roll bottom. Cover patty with generous portion of salsa. Add the roll tops and serve. Makes 6 Burgers
