Mayan Coastal Burger w/ Caramelized Fruit Salsa

Ingredients

1/4 cup olive oil
1 onion, peeled and sliced in 6, 1/2″ slices
1 small can sliced pineapple
1 1/4 lb. ground beef chuck
1 1/2 cup corn chips, finely crushed
1 egg
2 fresh, hot jalapeño peppers, seeded and finely chopped
3 Tbsp. balsamic vinegar
1/4 cup fresh cilantro
4 oz. sharp cheddar cheese, shredded
1 large avocado, peeled, seeded & diced
1/2 cup fresh mango, peeled, seeded & mashed
3/4 cup coconut, packaged, flaked & sweetened
6 lettuce leaves
6 Sun-dried tomato rolls, split in half

 

Instructions

Brush grill with olive oil and prepare a hot grill: then brush the onion and pineapple slices with olive oil. Place on the grill and cook on both sides until caramelized. Remove and set aside on a plate.

Next, combine the beef, chips, egg, jalapenos, vinegar, cilantro & cheese in a medium bowl. Mix thoroughly and form into 6 patties. Place on grill and cook for 4-6 minutes per side or until done to preference. Remove from grill.

Then dice the pineapple & onions: add the diced avacado & mashed mango into a small bowl to make the salsa.

Place 6 halves of the rolls on a serving platter. Layer each roll with a lettuce leaf, 1/8 cup coconut, the beef patty and the fruit salsa. Top each burger with the other halves of the rolls. Secure with a wooden skewer, if desired.
