Mediterranean Gourmet Burger

Burger Recipe (serves 4)
1 lb. 85% lean ground beef
1 cup chopped sweet onions (caramelized until nicely browned in 2 T olive oil)
1 cup crumbled feta cheese
1 T finely chopped fresh garlic
1 T finely chopped fresh cilantro
1 T finely chopped fresh jalapeno pepper (stemmed and seeded before chopping)
1 T fresh squeezed lime juice
1 T ground cumin
1 t. salt
1 t. ground corriander
1 t. ground turmeric
1/2 t. ground white pepper
Mango Chutney Dijon Yogurt Dipping Sauce
1 cup Mango Chutney
1/2 cup plain yogurt
2 T dijon mustard



Burger procedure: Add ingredients in order in large mixing bowl. Combine well. Let set overnight in refrigerator for flavors to marry. Grill burger over charcoal grill to desired doneness. Serve on buttered toasted foccacia bun with thick slice of vine ripened red tomato and nice leaf of green leaf lettuce. Serve with dipping sauce on the side in small condiment bowl. Procedure for dipping sauce: Add all ingredients into food processor and process until smooth. Then refrigerate.
