Mediterranean Summer on a bun

Ingredients

1/4 cucumber
2 oz mint leave
8 oz plain yogurt
1/4 cup balsamic vinegar
2 Tbsp worcestershire sauce
1 Tsp season salt
1 Tbsp fresh ground black pepper
2 Lbs fresh ground sirloin
8 oz sun dried tomato feta cheese
1/2 large red onion
2 Tbsp garlic infused olive oil
1/2 bottle Sutter Home White Cabernet Sauvignon
2 Tbsp clover honey
2 oz garlic infused olive oil
1/2 Cup garlic infused olive oil
6 fresh Kaiser rolls

 

Instructions

Peel skin of cucumber with fork to reduce bitterness, dice into small chunks. Chop mint to extract oils. Combine with yogurt in medium bowl and set aside. Combine Balsamic vinegar, worcestershire sauce, season salt, and pepper in bottom of large baking dish. Gently work mixture into ground sirloin. After about 2/3'rds of the mixture is incorperated add feta to meat and form patties. Allow to sit for 15 minutes, then flip and allow to set for 15 additional minutes. Preheat grill. Dice 1/2 large red onion. In ceramic lined sauce pan sweat onion in garlic infused olive oil over low heat, approximately 5 minutes. Onions should start to turn translucent. Add 1/4 bottle White Cabernet Savignon and 2 Tbsp clover honey. Reduce for 10 minutes then add remaining wine. Set aside covered to setup. Prepare grill with olive oil, temperature should be approximatly 450 degrees. Place patties around edges of grill elements so as to be over direct flame. Let sit 5 minutes. While burgers are cooking on the first side take olive oil and brush into split Kaiser rolls with pastry brush. Once the 5 minutes is up flip burgers and place rolls on warming rack of grill, cook for an additional five minutes. Remove buns and burgers, place burgers on the buns and top with wine reduction and yogurt sauce. Enjoy.
