Merlot Onion Burger

Ingredients

2 teaspoons dijon mustard
1 teaspoon honey
3 tablespoons red wine vinegar
2 tablespoons olive oil
salt and pepper to taste
3 cups mixed field greens
1.5lbs. ground beef, 80% lean, 20% fat
1 large white or yellow onion
1 cup drinkable Merlot (or other red wine that's good with beef)
6 oz. sharp cheddar cheese, grated
6 whole wheat hamburger buns or round rolls

 

Instructions

1.) Whisk together mustard, honey, vinegar, and pepper to taste. Slowly drizzle in oil and whisk to form a dressing. Toss greens with dressing and set aside. 2.) Salt and pepper ground beef and form into 6 quarter-pound patties, about 1/2" thick. 3.) Peel and slice onion into 6 thick rounds, about 1/3" thick. 4.) Heat grill to medium high and place an all-metal pan on the grill to one side. 5.) When the grill has heated up, place the onions on the grill, grilling about 3-4 minutes per side, or until both sides have dark brown grill marks. 6.) Remove pan from grill briefly to add Merlot, and then replace on the grill. As the onions finish grilling, place them in the pan with the Merlot on the grill. 7.) Place burger patties on grill and grill to desired doneness, about 4 min. per side for medium-well. 8.) Immediately after flipping each burger, top with 1 oz. shredded cheese and close grill top. 9.) When cheese has melted, remove burgers from the grill, place on the bun and top with a Merlot-soaked onion, and a handful of dressed greens.
