MIAMI NIGHTS MOJO BURGER

Ingredients

MOJO MAYO WITH CHORIZO SAUSAGE
1 cup mayo
1 lemon (fresh of coarse)
2 teaspoons roasted garlic
2 ozs. fresh chopped oregeno
1 teaspoon red pepper flakes
1/4 cup finely chopped onion
2 cups crumbled fried chorizo sausage

PATTIES
1 3/4 lbs ground sirloin
1/4 lbs ground pork
3 tablespoons Sutter Home Cabernet Sauvignon wine
1 cup finely chopped onion
2 tablespoons course black pepper
2 teaspoons salt
6 slices of smokey provolone cheese
2 well ripened plaintains cut & fried into 12 pieces..two per burger
2 tablespoons olive oil to fry plantains
6 slices of a juicy tomato
6 pieces of cuban bread sliced and toasted..if can’t get Cuban bread..fresh hoagie roll will do

 

Instructions

Prepare and preheat your grill to a medium high heat

Place a non-stick skillet on grill
Take chorizo out of casing and crumble onto pan and fry until crispy,drain onto paper towel and set aside.

In mixing bowl mix mayo,garlic, red pepper, lemon, oregano, onion, and fried chorizo. Stir until well blended. Let chill for at least one half hour. This is the MOJO MAYO WITH CHORIZO!

PATTIE
In another bowl mix beef and pork with wine, salt, pepper, onion. Form into 6 rectangular shaped patties and set aside.

Oil the grill well.

Place patties on grill and wait 3-5 minutes to turn each side (only once) last minute of cooking add provolone cheese. Place your beauties into an aluminum pouch and cover..very tight!

Place skillet back on grill and place 2 tablespoons olive oil and wait 30 seconds to place 2 sliced ripened plaintains (cut on the bias) into pan and fry on both sides until crispy and carmelized.About three minutes on each side. Remove pan and drain plaintain pieces onto paper towel.
Slice 6 pieces of juicy tomato
Place Cuban bread onto grill until toasty. Remove and set aside
Now its time to assemble your masterpiece!!!

Take MOJO MAYO out of chilling area and place a 2 teaspoons on bottom bun
Add Pattie with cheese
Place 2 slices of crisy plaintains on top of pattie
Add slice of tomato
Take top bun and add 1 teaspoon of MOJO MAYO. Press burger together and cut open to see this beauty! WOW..WHERE DO YOU START?
