Mom’s salmon burger

1 lb. coarsely chopped salmon filets or 1 can (14 oz) canned salmon
1 cup Italian breadcrumbs
1 organic egg, lightly beaten
1 tsp lemon zest
2 tbs Sutter Home chardonnay
1 green scallion, chopped
1 clove of garlic, minced
1/2 tsp parsley
1 tbs olive oil
salt and pepper to taste
a dash of hot sauce (optional)



Combine all ingredients and form into patties. Grill the burgers over medium-high heat for 3 to 4 minutes, turning the burger very gingerly! Cook an additional 3 to4 minutes, or until just cooked through.
