Ingredients

1/2 cup seedless red raspberry jam or preserves
1 tsp. sambal
6 oz. shaved smoked ham, coarsely chopped
8 oz. shredded Swiss cheese
2 lbs. ground turkey, 80-85 % lean
2 teaspoons salt
1 teaspoon poultry seasoning
2 tablespoons finely chopped scallion
1/3 cup Colavita light olive oil for grill and to coat patties
1/3 cup Grey Poupon Dijon Mustard
6 5-6 inch bakery croissants, split
2 cups shredded iceberg lettuce

Instructions

Heat Grill to medium-high heat. Make Spicy Raspberry Spread: Combine jam/preserves with sambal; reserve. Make ham and Swiss topping: Combine ham and swiss togther, mixing well; reserve. Make Patties: Combine turkey, salt, poultry seasoning, and scallions. Form into 6 patties similar in shape and size to croissants. Coat grill rack heavily with oil, then brush patties with oil. Place patties on grill; cook 5 minutes. Turn and immediately divide the ham and Swiss topping among the six patties, mounding slightly in the middle (mixture will flatten and spread slightly as the cheese melts). Place croissants, cut-side down on outer edges of grill. Close grill lid and cook patties and croissants approximately 4-5 minutes. Patties should be done 165 degrees internal temp; topping melted, and croissants should be crusty on cut surface. Assemble burgers: Spread bottom portion of croissants generously with mustard. Add shredded lettuce and top with a patty. Spoon a heaping tablespoon of the raspberry spread on the top portion of the croissant and close. Serve immediately. Makes 6
