Mouth-watering Artichoke Burgers

Ingredients

Ingredients Artichoke Dressing:
1 cup mayonnaise
9 tablespoons chopped canned artichoke hearts (well drained)
1/4 teaspoon salt
1/2 teaspoon freshly ground pepper
Patties:
1 pound ground sirloin
1 pound ground chuck
3 tablespoons crumbled feta cheese
6 tablespoons frozen chopped spinach (thawed and well drained)
6 tablespoons freshly grated parmesan cheese
3 tablespoons chopped canned artichoke hearts (well drained)
2 tablespoons minced white onion
1 teaspoon salt
1/2 teaspoon freshly ground pepper
vegetable oil, for brushing the grill rack
6 hamburger buns (split)
3 tablespoons extra virgin olive oil for brushing on the hamburger buns for toasting

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the artichoke dressing, combine the mayonnaise, artichoke hearts, salt and pepper in a bowl. Mix well to combine and refrigerate until serving. To make the patties, combine the freshly ground sirloin, freshly ground chuck, feta cheese, spinach, parmesan cheese, artichoke hearts, onion, salt, and pepper in large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form into patties. When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover and cook until browned on the bottoms, approximately 3-4 minutes. Turn the patties and continue grilling until done to preference, approximately 5 minutes longer for medium. When the patties are cooked, remove from the grill, stacking to keep warm. Spread even amounts of extra virgin olive oil on inside of each hamburger bun. Place the buns (olive oil side) down on outer edges of grill rack to toast lightly. Remobe from rack when done. To assemble the burgers, place a patty on bottom portion (toasted side up) of each hamburger bun. On the toasted side of the top portion of each hamburger bun, spread a generous amount of the artichoke dressing and then place on top of burger. Serve. Makes 6 burgers
