My Big Fat Greek Burgers

Ingredients

  • 2 tablespoons butter
  • 6 large eggs
  • 12 small white pita breads
  • Tzatziki Mayonnaise
  • 1/2 Cup Greek whole milk yogurt
  • 1/2 Cup mayonnaise
  • 1/2 Cup shredded cucumber, drained
  • 2 cloves garlic, finely minced
  • 1 teaspoon lemon zest plus 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon finely chopped black olives
  • 1 tablespoon chopped fresh mint
  • Burgers
  • 2 Pounds ground sirloin
  • 1/2 teaspoon chopped fresh oregano
  • 1 teaspoon chopped fresh dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 Cup crumbled feta cheese
  • 6 (1/2-inch) red onion slices
  • 6 slices Mozzarella cheese from an 8-ounce package
  • 2 Cups fresh spinach leaves
  • 6 (1/2-inch) tomato slices

Instructions

  • 1. Preheat a gas grill to medium high heat. Prepare grill grates with non-stick spray. Place a 10-inch cast iron skillet on one side of the grill to preheat. Add butter to skillet and allow to melt. Crack eggs into the hot skillet. Cover grill and cook eggs for 2 minutes, or until the whites of the eggs are fully cooked and the yolks are still runny. Remove skillet from grill. Place eggs on a plate and cover with foil to keep warm.
  • 2. Cut the pita bread using a 5-inch round cutter. Set aside.
  • 3. Place the Tzatziki Mayonnaise ingredients in a medium bowl. Stir to blend and refrigerate until ready to use.
  • 4. To make the burgers, in a large bowl, gently combine ground sirloin, oregano, dill, salt and pepper. Lightly shape into 12 patties. Place 2 tablespoons crumbled feta cheese in center of 6 patties. Cover with remaining 6 patties. Using fingertips, press sides of the patties to seal in the feta cheese. Press patties to fit the pita bread.
  • 5. Place the patties and the red onion slices on the grill. Cook the patties until browned on the bottom, about 4 minutes. With a wide spatula turn the patties and onion slices and cook until done to preference. During the last few minutes of cooking, place the pita bread on the outer edge of the grill until very lightly toasted. Place a slice of mozzarella cheese onto each burger for the last minute of cooking time.
  • 6. To assemble the burgers, cover 6 pita bread with spinach leaves. Add cheese-topped burger patties. Spoon on the grilled red onions. Add the tomatoes. Top each with a fried egg. Spoon on a generous amount of the Tzatziki mayonnaise. Cover with pita bread. Serve immediately and enjoy with chilled Sutter Home Zinfandel!!!
