Naan-Better Avocado-Butter Chipotle Cha-Cha-Cha Burger
Ingredients
Patties
1 pound ground chuck
1 pound ground sirloin
2 tablespoons chopped fresh cilantro
1 4 oz. can chopped or diced green chiles, drained
4 oz. Tillamook PepperJack cheese, cut in small cubes
2 teaspoons ground chipotle pepper
2 teaspoons coarse sea salt
2 teaspoons fresh ground black pepper
2 tablespoons Colavita Extra Virgin olive oil
12 slices Niman Ranch Uncured Chipotle Bacon
1 large ripe slicing tomato, sliced into 6 pieces.
Avocado Butter
2 ripe Hass avocadoes
1 small red or Bermuda onion, diced
½ teaspoon coarse sea salt
Bread
3 loaves (6 x 8) of fresh naan bread, sliced in half. (I use the Tandoori brand, by Fabulous Flats, package of 2 loaves.)
2 tablespoons Colavita Extra Virgin olive oil for grilling
Instructions
Make the patties:
-Combine in a bowl the ground chuck, ground sirloin, chopped fresh cilantro, drained green chiles, Pepper Jack cheese cubes, ground chipotle pepper, and 1½ teaspoons each sea salt and ground black pepper.
-Mix lightly with a fork or hands until all ingredients are well-distributed.
-Form mixture into 6 patties, hiding the cheese cubes within the meat.
-Gently depress the inner portion of each patty to form a concave cooking surface.
-Drizzle each patty with the olive oil, and sprinkle each with the remaining salt and pepper.
-Refrigerate until ready to grill.
Make the avocado butter:
-Cut each avocado in half, remove the pit, and scoop out the avocado into a bowl.
-Add the diced red onion, and salt.
-Mash with a fork until creamy.
-Refrigerate until ready to grill.
Cooking the burgers:
Preheat a gas grill to medium-high.
-Place a large nonstick sauté pan on the grill.
-Put the chipotle bacon in the pan, fry til crisp, and drain on paper towels.
-Next arrange the 6 patties on the grill grates. Cover and cook for 4-6 minutes. Open the grill, turn the patties over and cook til desired doneness.
-Remove patties to a platter and arrange 2 slices of chipotle bacon on each. Cover with foil.
-Brush each of the 6 pieces of naan with olive oil. Place on grill and turn after 30 seconds, then grill for another 30 seconds. Remove from grill and place on plate.
-Slather each piece of naan with avocado butter. Top with a tomato slice and a burger patty. Fold like a taco, pick up and enjoy!
