Naches Carne Asada Burger

Pairs well with:


Hard to pronounce yet easy to drink, this wine combines lychee fruit and white peach flavors with a hint of spice.


3 lbs fresh ground beef
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground white pepper
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika, smoked or sweet if available
1/2 cup chopped fresh cilantro
2 Tbs. Chipotle Tabasco Sauce

1 white onion, chopped
1/2 cup chopped fresh cilantro
1 lime, juiced
6 Kaiser Rolls split for burgers
1 ½ cup Chipotle Mayonnaise
3 fresh limes
12 oz package cotija cheese, sliced
1 white onion, sliced
2 bunches fresh Cilantro


Preheat grill to medium-high heat.
Combine first 11 ingredients in bowl and mix well.
Form into patties.

In a small bowl, stir together 1 chopped white onion, cilantro, and the juice of 1 lime. Set aside to use as a cilantro relish for the burgers.

Open Kaiser rolls and spread Chipotle Mayonnaise on each side.

Place burgers on grill over medium-high heat and grill each side approx. 3 minutes or until firm on each side.
Slice limes in half and squeeze lime onto burger, each side.
Place slice(s) of cotija cheese on top of each burger to cover burger.
Close lid and grill one minute to soften cheese.
Remove burgers from grill, place each burger on bottom bun.
Place 1 tsp. of cilantro relish on top of each burger, 1 slice onion and a top sprig of fresh cilantro and then top bun.
