Napa Blue Burger
l lb ground sirloin
1 egg, slightly beaten
1/4 lb mild blue cheese granulated
sweet onion, preferably Vidalia
sourdough French bread
Combine beef and egg and just enough wine to make a light, fluffy mixture. Make 10 5-inch patties approximately 1/4 inch thick.* Put about 1 tablespoon crumbled blue cheese on 5 of the patties and top with the other 5 patties. Pinch slightly to seal. Dust burgers on both sides with granulated garlic. Grill approximately 3 minutes on each side. Serve on grilled sourdough bread and top with thinly sliced deep-fried onions. * Handle beef as little as possible.
