Naples Kobe Burger

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients

Burger:
2 lbs. Kobe ground chuck
2 Tbsp. Worcestershire sauce
1 Tbsp. Pickapeppa sauce
3 Tbsp. Sutter Home White Merlot wine reduction
onion topping for burger:
3 lg sweet onions, such as Vidalia
2 Tbsp. Grape seed oil
1 Tbsp. Worcestershire sauce
1 tsp. Pickapeppa sauce
3 Tbsp. Sutter Home White Merlot wine reduction
Gruyere cheese,thickly sliced small burger sized
Ciabatta rolls

 

Instructions

Prepare the wine reduction: Take 2 small (187 ml) bottles of Sutter Home white merlot and cook over a low heat (low simmer) for approximately 45 minutes; until reduced by half. Set aside. This will be used in both the burger and the sauted onion topping. Burgers: In a large bowl combine: 2 lbs. Kobe ground chuck. 2 Tbsp. Worcestershire sauce 1 Tbsp. Pickapeppa sauce 3 Tbsp. Sutter Home White Merlot wine reduction Gently pat and shape burgers together in the palms of your hands. Set aside. These can be refrigerated until you are ready to grill them. Carmelized onion topping: Slice 3 large sweet onions, into rings. In a large pre-heated frying pan add 2 Tbsp grape seed oil. When hot add sliced onions. Saute onions over medium heat until medium brown and carmelized. To onions, add 1 Tbsp. Worcestershire sauce, 1 tsp. Pickapeppa sauce and 3 Tbsp. Sutter Home White Merlot wine reduction. Continue to simmer until well blended and set aside to be used as a topping. Building the Burger: Grill burgers to desired doneness. Add a generous mound of sauteed onions. Top with a thick slice of Gruyere cheese and allow to melt over onions. Put burger on Ciabatta roll and serve with a glass of White or Red Merlot.
