New England Burger

Ingredients

1/2 Cup Chopped Walnuts
3 Tbs Brown Sugar
1/2 Cup Chopped Celery
1/2 Cup Mayonnaise
1/2 Cup Dried Cherries
2- Chopped Granny Smith Apples
1 Jar Barbecue Sauce 
10 oz Vermont Maple Syrup
1 Beaten Egg
3 tsp Salt
1/4 Cup of Sutter Home Cabernet
3 lb Fresh Ground Chuck
Oil for Grill Grate
6 Kaiser Rolls
Vermont White Cheddar (Sliced)
6 Crisp Leafs Iceberg Lettuce

 

Instructions

General: Preheat the grill to medium high Topping: 1 Place ½ Cup of chopped walnuts in a heavy skillet on the grill and heat adding in 1 TBS of Brown sugar and caramelize. 2 Place celery, Mayonnaise, dried cherries and two chopped Granny smith apples into a bowl. Add in the walnuts that have been caramelized and cover and set aside. Sauce: Mix the barbecue sauce and maple syrup together in a medium pan on the grill and simmer for approximately 20 to 30 minutes and set aside. Burger: 1 Beat the egg in a large bowl then mix in salt, and 1/4 cup wine. 2 Next, thoroughly mix the ground beef with the egg, wine and salt. Separate the meat mixture into 6 equal lightly formed balls and press out each to a size that is approximately the same or slightly larger than the rolls. Grilling: 1 Apply oil to the grill grate 2 Cut Kaiser rolls in half ready for toasting on the grill. 3 Place meat patties on the grill over medium high heat and cook for about 6 to 7 minutes. Carefully turn and cook the second side for about 5 to 6 minutes. Note that cooking time may vary depending on grill temperatures and “hot spots” of each grill. 5 A couple of minutes prior to removing the burgers from the grill, generously coat one side of the burger with the sauce as a glaze and top with a slice of cheddar cheese. 4 Place the Kiser rolls, cut side down, on the grill, lightly toast and remove from the grill. 5 Place two pieces of crisp lettuce on the bottom ½ of the toasted Kiser roll. 6 Place the burger directly on the lettuce. 7 Generously coat the top of the burger with topping and place the top half of the toasted roll on the burger. 8 Slice as desired and serve immediately.
