New Jersey Sweet Corn Relish and Tomato Horseradish Burgers, Forget About It!

New Jersey is known for its flavorful fruits and vegetables, particularly its corn and tomatoes.This burger combines those two wonderful ingredients to create this fabulous burger. After all we are not called the Garden State for nothing!

Ingredients:

1 cup fresh NJ silver queen corn kernels

1 Tbsp. chopped red onion

1 Tbsp. minced fresh flat leaf parsley

1 clove garlic, minced

1 Tbsp. Colavita extra virgin olive oil

1 Tbsp. freshly squeezed lime juice

2 pounds ground chuck

2 tsp. Kosher salt

1/4 Cup grated fresh or prepared horseradish

1/2 tsp. freshly ground pepper

4 Tbsp. of Colavita extra virgin olive oil

6 Kaiser Rolls, split

6 large NJ tomato slices, about 1/4 inch thick

Instructions:

Directions: Preheat gas grill to medium-high. To make corn relish; combine corn, onion, parsley, garlic, olive oil and lime juice in medium bowl and mix well. Cover and chill to let flavors blend. To make patties, combine ground chuck, kosher salt, horseradish and ground pepper in large bowl, handling the meat as little as possible, mix well. Divide the mixture into 6 equal portions and form the portions into patties. Brush the grill rack with oil. Place the patties on the rack off center from the direct flame to prevent flare-up fire, cover, and grill for 4 minutes. Turn the patties and continue grilling until done to preference, about 5 minutes longer for medium. Be sure not to press down on patties while they are cooking as this will eliminate the moistness of the burger. During the last 3 minutes of cooking, place the rolls cut side down, on the outer edges of the rack to toast lightly. To assemble the burgers, place a generous amount of the corn relish on the roll tops and one tomato slice. Place the patties on the roll bottoms. Add the roll tops and serve.
