Northwest Wasabi Apple-Slaw Burgers

Living in the Northwest apple country, I am inspired to use apples with meats, in pastas and salads and with a variety of vegetables.Believing that culture has no boundaries, I feel inspired to blend other cultural flavors into my home cooked northwest cuisine, thus the Northwest Wasabi Apple-Slaw Burger.

Ingredients:

Wasabi Paste
2 tablespoons, Pure Wasabi Powder
2 tablespoons, cold water

Wasabi Mayonnaise
1 large egg
1 tablespoon, freshly squeezed lemon juice
2 teaspoon, white wine vinegar
1/2 teaspoon, dry mustard
1/2 teaspoon, fine salt
1/8 teaspoon, white pepper
1 tablespoon, fine white sugar
1 cup, canola oil
2 tablespoons, Wasabi Paste

Apple-Slaw
1/4 medium head, red cabbage, finely shredded
1/2 medium head, green cabbage, finely shredded
1 medium carrot, shredded
1 large, honey crisp apple, finely julienned
1/2 large, granny smith apple, finely julienned

Burgers
2 pounds, ground chuck
6 teaspoons, cold butter, cut individually
2 teaspoon, sea salt
2 teaspoon, freshly ground black pepper

3 tablespoons, vegetable oil to coat the grill grates
3 tablespoons, vegetable oil, for the rolls
6 medium Kaiser rolls

Instructions:

To make the Wasabi Paste, mix Wasabi Powder and cold water in a small bowl and stir to form a smooth paste. Cover and refrigerate for 5 minutes.

To make the Wasabi Mayonnaise, using a food processor on high, blend the egg, freshly squeezed lemon juice, white wine vinegar, dry mustard, fine salt, white pepper, fine white sugar and two drops of oil. Once it emulsifies, drizzle in the Canola oil in a ‘slow’ steady stream while blending to completely emulsify. On low, blend in Wasabi Paste. Cover and refrigerate while preparing the Apple-Slaw.

To make the Apple-Slaw, place the prepared cabbage, carrot and apple into a large bowl, add 3/4 cup Wasabi Mayonnaise, stir to combine, cover and chill for 1 hour.

To make the burgers, preheat gas grill to 375° F Form 6 patties as large as the rolls, gently pushing a cold butter patty into each center while forming the patties then press a thumb-print into the top of each patty. Season both sides with salt and pepper.

To grill burgers, when the grill is hot, brush the grates with oil. Place patties in the center of the grill and cook 4 – 6 minutes on each side; depending on grill accuracy, outside temperature and wind conditions. During the last minute of cooking; brush oil onto the sliced side of the rolls, place them on the grill and toast lightly. (About 1 minute)

To assemble the burgers, spread 2 tablespoons of Wasabi Mayonnaise onto each toasted roll top and bottom, place burgers onto the roll, top with 1/4 cup of Wasabi Apple-Slaw, top with roll top and serve. Note: Allow some of the liquid to drain from Wasabi Apple-Slaw so the rolls stay firm.
