Ingredients

PATTIES:
1 pound ground chicken
1/2 pound ground turkey
1/4 cup feta cheese, crumbled
1/4 cup chopped fresh parsley
1/3 cup Sutter Home White Zinfandel Wine
1/2 teaspoon salt
1/2 teaspoon pepper
vegetable oil, for brushing grill rack
6 Kaiser rolls, split
6 slices Vadalia onion (sliced 1/8" thick)
2 cups of baby spinach leaves, shredded
TOMATO OLIVE SPREAD:
1/2 cup oil-cured pitted olives, minced
1/2 cup sun dried tomatoes, minced
3 cloves garlic, minced
2 teaspoons fresh oregano, chopped
2 teaspoons fresh thyme, chopped
1/2 cup Colovita Extra Virgin Olive Oil
1 lemon, juiced

 

Instructions

Prepare a medium hot fire in a charcoal grill with a cover, or pre-heat a gas grill to medium high To make the Tomato Olive Spread, combine the olives, tomotoes, garlic, oregano, thyme,olive oil,and lemon juice. Process in a food processor or blender until just blended. Refrigerate until serving. To make the patties, combine the ground chicken, ground turkey, feta cheese, parsley,wine, salt and pepper in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form each portion into a patty to fit the rolls. Brush the grill rack with oil, place the patties on the rack, cover, grill until browned on the bottoms, 5-6 minutes. Turn the patties over and continue grilling another 5-6 minutes or until internal temperature reaches 165 degrees. To assemble the burgers, place a generous amount of the tomato olive spread over the cut sides of the rolls. On each roll bottom place 1/3 cup of shredded spinach, a patty, and an onion slice. Add the roll tops and serve.
