Nutty Thai Burger with Roasted Red Pepper and Cucumber Sauce

Ingredients

1/4 cup honey roasted peanuts(slightly crushed)
2 tbs. fresh squeezed lime juice
2 tbs.+ 1 tsp. chopped fresh garlic
1/4 cup finely chopped cilantro
1 tbs. fresh chopped ginger paste(found in produce section)
2 tbs. light soy sauce
1/4 cup creamy peanut butter
3 tbs. sesame oil (divided into thirds)
2 lbs. lean ground beef
3 red bell peppers
1/4 cup finely chopped red onion
1/3 cup finely chopped seedless cucumber
1 cup plain lowfat yogurt
6 tbs. cream cheese
6 French Hamburger Buns

 

Instructions

For Burgers: preparation time- 30-45 minutes Place peanuts in baggie and carefully use a mallet or rolling pin to slightly break peanuts.(do not crush too much,you want the chunky texture in the burgers)Add to large bowl. Next,cut a lime,or 2,in half and squeeze juice into small bowl.Discard any pulp or seeds.Add juice to peanuts. Chop garlic and cilantro and add to peanut mixture.(save 1 tsp.garlic for sauce mixture) Add ginger paste,soy sauce, peanut butter and 1 tbs. sesame oil to mixture and mix ingredients with a fork until well blended. Then add ground beef and mix well. Form into 6 patties and place in refrigerator for 30 minutes or longer. For Peppers: preparation time- 5-10 minutes Clean and quarter red peppers. Place in large bag with 1 tbs. sesame oil. Shake well to coat peppers. Set aside until ready to grill. For Sauce: preparation time-10-15 minutes Finely chop red onion and cucumber. Place in medium bowl.Add remaining tsp. chopped garlic, yogurt and cream chesse. Mix well with a fork and place in refrigerator until ready to serve. Cooking time- 20-30 minutes Take remaining 1 tbs. sesame oil and grease grilling rack. Pre-heat gas grill to med-med high heat. When hot, place patties and red peppers on grill. Close lid and cook 12 minutes.Turn patties and peppers and cook additional 10 minutes(for medium) with lid closed. Toast buns if desired. Place burgers on bun with 1-2 pieces of roasted pepper and top with 1tsp.-1 tbs. of cucumber sauce, depending on taste. Makes 6 burgers.
