Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.


1 cup mayonnaise
2 cloves garlic, minced
2 teaspoons fresh rosemany, minced
2 teaspoons fresh thyme, minced
20 "tiny" Nicoise olived, minced
2 tablespoons Colavita olive oil
1 tablespoon butter
1 clove garlic, minced
1 large shallot, minced
1 large red pepper, minced
6 large fresh mushrooms, minced
1/2 large sweet onion, minced
1 1/2 teaspoon coarse French sea salt
1/3 teaspoon freshly ground pepper
2 pounds freshly ground chuck
2 tablespoons Colavita olive oil
3 cloves garlic, chopped
3 tablespoons fresh rosemary, chopped
3 tablespoons fresh thyme, chopped
2 1/2 teaspoons course French sea salt
3/4 teaspoon freshly ground pepper
12 ounces Gruyere, divided into 6 equal portions
Colavita olive oil for brushing grill
6 Brioche buns



To prepare the aioli, place mayonnaise in bowl. Add garlic, rosemary, thyme and olives. Mix well, cover and refrigerate. To prepare the duxelles, place olive oil and butter in pan. On medium heat, melt butter. Add garlic and shallot and saute until lightly browned. Add red pepper, mushrooms, onions, salt and pepper, and cook on low heat until very tender (Approximately 15-20 min.) Set aside. To prepare patties, combine ground chuck, olive oil, garlic, rosemary, thyme, salt and pepper. Mix well, handling meat as little as possible to avoid compacting. Divide in 6 equal portions. Form two equal-sized patties (large enought to fit Brioche bun)from each portion. Place 2 ounces Gruyere on 1 patty and cover with the other patty, lightly pinching edges together to seal. Repeat until all 6 patties are formed. Brush grill rack with olive oil. Place patties on grill. Cover and cook approximately 4 minutes. Turn patties and continue grilling until done to preference, (approximately 4-5 additional minutes for medium). During last 2 minutes of grilling, place Brioche buns, cut side down on grill to toast, watching carefully to avoid burning. To assemble burgers, place a generous amount of aioli on both cut sides of each Brioche Bun. Place burger on bottom half of Brioche bun and place approximately 1/2 cup of duxelles atop each burger. Add the Brioche bun tops, serve and enjoy. Makes 6 burgers.
