Ingredients

2 lbs ground sirloin
1 cup diced tomatoes
1 cup diced onion
24 spears of asparagus
1/2 cup white wine vinegar
5 shallots, minced
2 Tablespoons minced tarragon
1/2 teaspoons white pepper
4 egg yolks
1 cup butter
vegetable oil
salt
6 Kaiser roll
1 and 1/2 pound lump crab meat

 

Instructions

Mix ground sirloin, tomatos and onion in a bowl. Form 6 equal patties and set aside. Cut asparagus to about 5 inches and set aside. Light your grill and get temperature to around 250F. Combine vinegar, shallots, pepper and tarragon in a sauce pan and place on grill. Stirring with a wire wisk, reduce down mixture until liquid is almost all gone. Remove from heat and let cool a little. Add egg yolks one at a time beating constantly with wire wisk. When sauce is well blended put back on grill beating constantly. When sauce becomes creamy remove from heat and add butter stirring until it is a mayonaise like consistancy. Wipe grill and asparagus with vegetable oil. Place patties and asparagus on grill. Grill asparagus until tender. On a 250F grill it takes about 2 minutes on each side, turning once. Burgers take about 5 minutes on each side. Cut roll in half and brush sauce on each half. Add patty, asparagus,about 4 0unces of the crab meat and a little more sauce. Add salt to taste, top with other half of roll and serve.
