Outside In Onion Burgers

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.


2 lbs. ground sirloin
1 lb ground pork
2 tsp. each salt and pepper
3/4 cup mayonnaise
1 cup grated parmasean cheese
2 tbsp. hot pepper sauce
1 1/2 cup chopped fresh onions
3 tbsp. fresh chopped chives
12 slices cooked bacon
6 leaves of green leaf lettuce
6 tbsp. prepared mango chutney
6 onion rolls



Mix together both meats and salt and pepper. Set aside. Mix together mayonnaise, parmesan, hot pepper sauce, chopped onions, and chives. Divide meat into 12 sections, press down each section making eight flat patties. Spoon about 1-2 tablespoons of the onion mixture on 6 of the 12 patties. Cover with the remaining four and seal each around the edges. Grill on medium heat for about 6-7 minutes per side. Top with 2 slices of bacon a leaf of lettuce, and a tsbp. of chutney on each. Serve on toasted onion rolls. Serves 6
