Palm Beach Sophisticate with Avocado & Tomato Confetti

Ingredients

Avocado & Tomato Onion Confetti
2 Haas Avocados skin and pit removed
4 Tsp fresh squeezed lime juice
3 Tsp Mayonaisse
1 medium sweet onion diced
1 large tomato diced
Sophisticate Sauce
3/4 Cup of Sutter Home Merlot
3 Tbsp fresh chopped garlic
2 Tbsp chopped shallots
2 Tsp tomato paste
4 Tbsp of lemon juice
2 Tbsp plus 2 tsp of heavy cream
4 Tbsp of butter
1 1/2 cup diced portabella mushrooms
Patties
1 lb ground chuck
1 lb ground sirloin
1 tsp of salt
Vegtable Oil for brushing grill rack
6 French Hamburger Rolls, split
6 Slices of Swiss Cheese

 

Instructions

Prepare a medium hot fire in a charcoal grill with cover or preheat gas grill to medium high. To make Avocado & Tomato Onion Confetti combine avocado, lime juice and mayonaise in food processor and process until smooth. Fold in onion and tomato until evenly distributed. Refrigerate. To make Sophisticate Sauce, in a heavy saucepan over medium heat, cook wine, garlic, shallots, tomato paste, lemon juice and cream until mixture is reduced by two thirds starting volume. Whisk in butter until melted. Add mushrooms and set aside to cool slightly. Sauce can be made in advance. Mix ground chuck, ground sirloin and salt in bowl. Add Sophisticate sauce to meat and mix well. Divide mixture into even portions and form patties to fit rolls. Patties will be slightly wet. When grill is ready, brush the rack with vegtable oil. Place the patties on the rack and cover turning until desired preference. 5-7 minutes for medium. During the final stages of cooking, place the rolls split side down on the outer edges of the grill and toast lightly. Add one slice of cheese to each burger in the last minute close cover briefly to ensure cheese melts evenly. To assemble burgers, place a pattie on the bottom of each roll and top with each burger with an equal portion of avocado & tomato onion confetti and serve. Makes 6 burgers.
