This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

2 lb. ground beef (ground chuck or round is best)
1 large portabello mushroom cap (or 4 “baby bellas”
1 can black olives, pitted, drained
1 6 – 8 oz can pizza sauce or Italian tomato sauce
1 tbl. Italian Seasoning
1 tsp. EV olive oil
salt
pepper
six slices provelone cheese
six split good-quality hamburger buns

 

Instructions

brush mushroom cap with olive oil and grill or cook under broiler for two minutes. Let cool and coarsely chop.
Combine chopped mushroom and drained olives in a blender or food processor and spin until finely chopped
Add mushroom/olive mixture to pizza or tomato sauce, mix in ground beef.
divide into six equal portions and grill for desired doneness (hint: medium to medium rare is best)
top each burger with a provelone slice, leave on grill for 1 extra minute or until cheese is melted
While cheese melts, place bun, cut side down on grill to lightly toast.
