Parma Italy Burger
Having grown up in CT with a father from italy I think I lived an interesting “American” life. This represents Italian American…a delicious burger from the summer grill with all of the flavor and history of Italy. Having lived and worked in Parma Italy it is a great way to share my experience and love of food and travel with my friends for a lazy summer grilling afternoon.
Ingredients:
1.5 lbs ground sirloin
1.5 lbs ground chuck
5 egg yolks
1 teaspoon salt
1 teaspoon black pepper
3/4 lbs finely shredded prosciutto di parma
1 cup parmigiano reggiano cheese
for the “Torta Fritta” fried bread which is usually served with hams in Parma Italy…a shortened easy version.
2 cans Pillsbury instant dinner rolls
peanut oil or lard for frying
Instructions:
mix all of the ingredients in a large bowl and form into 12 patties. grill on each side on the bbq for 3-5 minutes and cover immediately with aluminum foil.
For the torta fritta which will act as your bun take the dough triangles and use two to make a square. Fry until golden brown and crispy.
