Pepper Bacon/Blue Cheese Burger

16 slices Pepper Bacon
4 ounces Blue Cheese
2.67 pounds of 85% lean ground beef
8 whole wheat buns
1 large purple onion sliced thinly
8 bibb lettuce leaves
1/4 cup olive Colvita olive oil
1 tablespoon Mayonnaise per hamburger bun



Light grill wait till hot 400 degrees. Divide beef hamburger meat into 8 servings. Divide Blue Cheese into 8 1/2 ounce pieces. Place Blue Cheese in the middle of the hamburger meat then form meat into firm patties making sure cheese is completely covered with meat. Place patties onto hot grill. Cook patties till medium well done. Brown pepper bacon in skillet until crisp. Drain on paper towel. Spread olive oil onto all the buns and toast lightly on hot grill. To assemble spread toasted buns with mayo, place cooked beef patty onto bun top with bacon then finish each burger with a slice of purple onion and one leaf of bibb lettuce.
