Peppered Turkey Burgers with Fresh Sage and Cranberry Orange Zest Mayonnaise

Cranberry orange zest mayonnaise
½ c mayonnaise
¼ c whole berry cranberry sauce
1 tsp orange zest
1 ½ tsp habenaro mango hot sauce
Peppered turkey burgers with fresh sage
2 lbs ground turkey
8 large sage leaves chopped finely
1 large scallion minced
3 tsp poultry seasoning
2 tsp salt
¼ c fresh ground pepper divided
6 Tbs butter softened
6 onion rolls
Vegetable oil for brushing the grill



Heat gas grill to med high To make cranberry orange zest mayonnaise In a small bowl combine mayonaise, cranberry sauce, orange zest and habenero mango hot sauce. Wisk together and set aside. To make peppered turkey burgers with fresh sage Place ground turkey in a large bowl. Add chopped sage leaves, minced scallion, 3 tsp poultry seasoning, 2 tsp salt, 1 tsp pepper, (set aside the rest of the ground pepper) and mix together gently, do not overwork the mixture. Divide into 6 equal portions and shape into patties. Generously coat patties with ground pepper and lightly press into the burger on both sides. Brush grill with oil and grill patties 6 minutes on each side. During the final 3 minutes of grilling spread butter on onion rolls top and bottom and grill buns till golden brown. To serve burgers, place patty on bun bottom, top with a generous amount of cranberry orange zest mayonnaise add top of bun and enjoy!
