Picadillo Burger
Ingredients
1 medium sweet onion, chopped fine
1 medium red bell pepper, chopped fine
3 Tablespoons olive oil
2 pounds of ground beef
3 clove garlic, chopped fine
1/2 cup of stuffed pimento olives, chopped
Kosher salt
freshly ground black pepper
ground cayenne pepper
1/2 cup of canned crushed tomatoes
lemon pepper
sliced fontina cheese slices
6 large potato rolls
lettuce
mayonnaise
dill pickle slices
ketchup
Instructions
To make the patties: Pre-cook the onions and red peppers lightly in 2 Tablespoons of olive oil in a cast iron skillet, remove, cool. Mix meat,garlic,stuffed pimento olives,Kosher salt,ground cayenne pepper, black pepper and crushed tomatoes. Last add cooked onions and red pepper mixture. Form patties and sprinkle with Spice Island and place patties on grill. Cover and cook 5-7 minutes on each side. Add fontina cheese and lightly toast rolls during last minute of cooking. Assembly burgers: Spread mayonnaise on rolls, place pickles, burger, and lettuce.
